I don’t know about you, but I want to get dinner on the table in less than 30 minutes. At the end of the day, I’m tired, but I want to eat a healthy meal, but the temptation to order takeout is real.
I eat chicken 2-3 times per week. It can take 20 to 30 minutes to cook a thick chicken breast properly (internal temp of 165).
Here’s my pro tip video: Slice it in half lengthwise. It will cook in half the time!
Or cube the chicken, and it can be ready in 6-7 minutes.
Ingredients:
- 2 thin boneless, skinless chicken breasts (or 1 lb cubed chicken) – I get it from ButcherBox!
- 1 tablespoon ghee
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 cup cherry tomatoes (optional)
- 1/4 cup crumbled feta cheese (optional)
- Chopped fresh parsley for garnish (optional)
Instructions:
- Prep the chicken: If using chicken breasts, slice them in half lengthwise to create thin cutlets. If using cubed chicken, cut into bite-sized pieces.
- Marinate (optional, 5-10 minutes): In a bowl, combine the ghee, oregano, thyme, garlic powder, paprika, salt, and pepper. Toss the chicken in the marinade to coat.
- Heat it up: Heat a large skillet over medium-high heat. If using cutlets, add ghee to the pan (if not already included in marinade).
- Cook the chicken: Add the chicken to the pan and cook for 6-7 minutes per side (cutlets) or until golden brown and cooked through (cubed chicken).
- Finish and serve: Transfer the cooked chicken to a plate. If using, add cherry tomatoes to the pan and cook for 2-3 minutes until softened. Top the chicken with tomatoes, crumbled feta, and fresh parsley for a burst of flavor and color.
