I’ve been thinking about my upbringing lately and wanted to share some insight into a few things I have learned.
If you don’t know me personally, I’m a farm girl. So growing up, I ate my fair share of meat. So when I say I struggle with eating a plant-based diet, I mean it!
But here’s the thing- I have read numerous studies, and research recommends eating a plant-based diet for cancer prevention and recurrence.
Now that I’m a cancer survivor and thriver, my main goal is never to get cancer again. Research suggests that consuming a plant-based diet can play a significant role in cancer prevention.
And, yet, UGH, I struggle.
I love a good burger. And sometimes I like them multiple times each week! So this week, I am sharing my favorite ways to add more produce into your weekly meals (and maybe this will encourage the both of us to venture outside of eating meat and try plant-based meals.)

Are you thinking of going plant-based? First, you will need to load up on your favorite fruits and veggies!
However, do you struggle with keeping your produce fresh? If your produce seems to be going bad before you eat it, try this tip:
- After the farmer’s market, or grocery store, clean your produce.
- Gently dry off the produce and grab a new dish towel.
- Dampen the new dish towel and wrap your produce in it and store it in your crisper.
This will keep your produce FRESH and for longer! Feel free to cut up or slice your produce before placing it in the container for easy access when cooking- this method will still work if you decide to chop it.
I know I might not ever be entirely plant-based, but I am committed to making small shifts every day to include more produce at every meal. But hey, if you are down to grab burgers and milkshakes- count me in!
