These juicy bison burgers are packed with flavor thanks to smoky blue cheese, a touch of dijon mustard, and fresh chives. They’re perfect for grilling on the BBQ or cooking in a cast iron pan, and they’re sure to be a hit with your friends and family.
Ingredients:
- 1 pound ground bison
- 1 egg
- 1 tablespoon minced garlic
- 1 tablespoon Dijon mustard
- 2-3 ounces crumbled smoky blue cheese (choose good quality!)
- Handful of chopped chives
- Salt and pepper to taste

- In a large bowl, combine the bison, egg, garlic, Dijon mustard, blue cheese, and chives. Season generously with salt and pepper.
- Mix well to combine, then form the mixture into 4 evenly sized patties.
- For best results, refrigerate the patties for at least 30 minutes, or overnight for extra firmness.
- Heat a cast iron pan on a grill or stovetop over medium heat. If using a grill, lightly grease the grates.
- Cook the patties for 3 minutes per side, or until cooked through to your desired doneness.
- Serve immediately on toasted buns with your favorite toppings.
Tips:
- Bison is lean, so cooking them in a pan and letting all the yummy juices surround the meat is just about the best thing ever. 🥩I cooked them on medium heat, 3 minutes a side.
- Top your burgers with additional toppings like caramelized onions, avocado slices, or a dollop of sour cream.
- This recipe can easily be doubled or tripled to feed a crowd.
