This dish is easy to make, and now is the time to try it while tomatoes are grown outside and actually taste like real tomatoes !
This recipe for a delicious and healthy side dish is packed with flavorful tomatoes and boasts potential anti-cancer benefits. Perfect for enjoying the peak season of outdoor-grown tomatoes, it’s simple to make and comes together in just a few steps.
Ingredients:
- 2 cups (or more) chopped tomatoes
- 3-4 cloves garlic, finely minced
- 5-6 basil leaves, chopped
- Drizzle of extra virgin olive oil
- Drizzle of balsamic vinegar
- Salt to taste
Instructions:
- Prep the tomatoes: Follow the steps in the mentioned video or simply sprinkle salt over the chopped tomatoes and place them in a colander. Let them drain for at least 20 minutes to remove excess liquid.
- Combine flavors: In a bowl, mix the drained tomatoes with the minced garlic and chopped basil.
- Dress it up: Drizzle with extra virgin olive oil and balsamic vinegar to your taste.
- Season and serve: Season with salt to taste and enjoy your refreshing and vibrant tomato side dish!
