But since my cancer journey, I’ve been feeling a little off. I’d describe it as I am less on fire…
When I got invited to go to Chicago and attend the Global Leadership Summit, I felt that spark again. It felt like a part of me WAS BACK!
That’s where I was this last week and let me tell you, being surrounded by other people who desire to grow and learn filled my cup!

Another way I feel like ME again is being in the kitchen! And one of my most requested recipes to share is this mouth-watering; CHIMICHURRI!
If you have ever wanted to try a new recipe but are intimidated by cooking, this is a SIMPLE and DELICIOUS recipe. And I find myself using it on everything!
This Argentinean Chimichurri can be drizzled on steaks, chicken, tacos, grilled veggies, avocado toast (and so much more!). When I make it, I usually double or triple the recipe as it makes everything I cook taste so much better.
Plus, it gets better with age and can store in your fridge for about a week. Then, if you don’t use it all, pop it into an ice cube tray (I use Souper Cubes), freeze it and use it to sauté veggies or chicken.
INGREDIENTS:
1/2 cup parsley
3 tbsp red wine vinegar
4-5 cloves of minced garlic
1-2 tsp red pepper flakes (start with one and add more for your liking)
Salt + pepper to taste
3/4 cup olive oil
Instructions:
❶ Add ½ cup olive oil and all of the rest of the ingredients to your blender.
❷ Blend until the parsley gets broken down.
❸ Drizzle in the rest of the olive oil while blending on low.
❹ Taste and adjust your seasonings.
